Behind the Scenes

The Team

Paul looks after the everyday running of the pub. He is a honorable member of The British Institute of Innkeeping with over 40 years experience in the hospitality trade earning numerous accolades, craft beer awards from Camra Business Institute diplomas.

Sallie is the complete foodie. Her first love is her career in the Film Industry as a Bafta Award winning Makeup Designer. But when not away filming she loves nothing more than choosing ingredients for menus and, of course wines, with a great eye for detail.

Darren is our new General Manager, who brings a passion for good food, and even better gins, to the pub. His passion for hospitality has grown over the last decade, having started serving behind the bar as soon as he could drink in front of it, so he knows a thing or two about what makes a great pub tick. When he is not running round the pub, he is at home tinkering on his cars with help from his girlfriend and cats, or being run ragged by his unicorn-crazed daughter.

Simon is our new Head Chef who brings high quality and beautifully presented dishes to our fast-paced kitchen. He has spent the past decade perfecting and finessing his skills and has amazing passion for experimenting and trying modern twists on classic dishes. Having trained in the fine art of patisserie, Simon is a stickler for quality desserts and accepts nothing short of perfection from his kitchen.
